Ingredients
  

For the cookies

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 egg
  • 1 cup apple cider
  • 1/2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

For topping

  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 3 tbsp unsalted butter

Instructions
 

  • In a small saucepan, simmer 1 cup of apple cider until it reduces to 1/2 cup (about 10–15 minutes). Let it cool.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream butter and sugars in a bowl until light and fluffy.
  • Add egg, vanilla, and cooled cider. Mix until well combined.
  • In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add dry to wet ingredients, mixing until just combined.
  • Use a tablespoon or small cookie scoop to portion out the dough. Roll each scoop into a ball with your hands.
  • Arrange the dough balls on the lined baking sheet. Bake for 10–12 minutes, until edges are lightly golden.
  • Let cool on the tray for 5 minutes, then transfer to a wire rack. Brush the cookies with melted butter, then press them into the sugar-cinnamon mixture

Notes

  • Reduce the cider first to intensify the apple flavor.
  • Add chopped dried apples or nuts for texture.
  • Store cookies in an airtight container for up to 5 days.
