In a small saucepan, simmer 1 cup of apple cider until it reduces to 1/2 cup (about 10–15 minutes). Let it cool.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream butter and sugars in a bowl until light and fluffy.
Add egg, vanilla, and cooled cider. Mix until well combined.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add dry to wet ingredients, mixing until just combined.
Use a tablespoon or small cookie scoop to portion out the dough. Roll each scoop into a ball with your hands.
Arrange the dough balls on the lined baking sheet. Bake for 10–12 minutes, until edges are lightly golden.
Let cool on the tray for 5 minutes, then transfer to a wire rack. Brush the cookies with melted butter, then press them into the sugar-cinnamon mixture
