- 1 cup raw almonds
- 1 cup raw cashews
- 1-2 tablespoons neutral oil optional, like sunflower or canola
- ½ teaspoon salt adjust to taste
- 1 teaspoon honey or maple syrup optional, for sweetness
Preheat oven to 350°F (175°C). Spread almonds and cashews evenly on a baking sheet. Roast for 8–10 minutes until golden and fragrant.
Remove from oven and let cool for 2–3 minutes (still warm but not hot).
Place nuts in a food processor. Blend for 5–7 minutes, scraping sides as needed, until smooth and creamy.
Add oil if a thinner consistency is desired.
Add salt and sweetener (if using). Blend briefly to combine.
Transfer to an airtight jar. Keeps in refrigerator up to 3 weeks.

- For extra flavor, add cinnamon, vanilla extract, or a pinch of sea salt flakes.
