Ingredients
  

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1-2 tablespoons neutral oil optional, like sunflower or canola
  • ½ teaspoon salt adjust to taste
  • 1 teaspoon honey or maple syrup optional, for sweetness

Instructions
 

  • Preheat oven to 350°F (175°C). Spread almonds and cashews evenly on a baking sheet. Roast for 8–10 minutes until golden and fragrant.
  • Remove from oven and let cool for 2–3 minutes (still warm but not hot).
  • Place nuts in a food processor. Blend for 5–7 minutes, scraping sides as needed, until smooth and creamy.
  • Add oil if a thinner consistency is desired.
  • Add salt and sweetener (if using). Blend briefly to combine.
  • Transfer to an airtight jar. Keeps in refrigerator up to 3 weeks.

Notes

  • Use unsalted nuts to control saltiness.
  • For extra flavor, add cinnamon, vanilla extract, or a pinch of sea salt flakes.
  • You can make it chunkier by pulsing briefly instead of blending to full smoothness.
