Prickly Pear Cactus Juice recipe

Prickly pear cactus juice, or prickly pear juice, is a refreshing beverage made from the fruit of the prickly pear cactus (Opuntia ficus-indica). This vibrant pink beverage is known for its unique flavor profile, which is often described as a combination of pear, watermelon, and cucumber.

Fresh prickly pear cactus juice with lime juice

Prickly pear cactus juice pairs well with savory foods like pork, prosciutto, shrimp, chicken, and nopales salad (with onion, cherry tomatoes, avocado, and queso fresco). It also complements sweet dishes featuring vanilla, cream cheese, white chocolate, mango, passion fruit, cucumber, watermelon, kiwi, and raspberry in desserts or drinks.

You can also use this juice in cooking to make syrups for cocktails or sauces for roasted meats. It’s also great in refreshing drinks like prickly pear margarita, prickly pear sour mixer, prickly pear lemonade, smoothies, and granitas.

Ingredients

  • 3-4 fresh cactus prickly pears
  • 1/2 cup water
  • 1-2 tbsp honey or agave syrup adjust to taste
  • Juice of 1 lime
  • Ice cubes optional
  • Mint leaves for garnish optional

Instructions

  • Wear gloves while handling the prickly pears to avoid skin irritation. Using a sharp knife, carefully slice off both ends of each prickly pear. Make a lengthwise incision along one side of the fruit and peel off the skin, revealing the vibrant flesh inside.
  • Chop the peeled prickly pears into chunks and place them in a blender. Add water and lime juice to the blender.
  • Blend until smooth.
  • For a smoother juice, strain the mixture using a fine mesh sieve or cheesecloth to remove any remaining seeds or pulp.
  • Add honey to the juice and stir well. Adjust the sweetness according to your preference.
  • Pour the Cactus Prickly Pear Juice over ice cubes into glasses and garnish with a slice of lime or a wedge of prickly pear for an extra touch of elegance.
